Avocado, Kale and Quinoa Salad


This hearty salad is exactly what I needed to get through today. Today was a big day for me as I had to go to my internship all day and then make a presentation. Although I am always more than prepared for presentations, I get very nervous and anxious before I speak in front of people.


My presentation was about plate waste and how to influence children to eat healthier foods, while also decreasing their food waste. It was a very interesting topic to research! Did you know that children waste more fruits and vegetables than any other food? And during school lunches, children tend to waste the most milk!

The salad I made today was refreshing, but also filling so it helped calm my nerves and power me through the day. It consisted of quinoa, kale, and avocado. Quinoa is gluten-free, high in protein and contains all nine essential amino acids, so it is a complete protein (not many plant foods are). Thousands of years ago, it was considered the “mother of all grains” because it has so many great health benefits.  It has 8 grams of protein per serving and 5 grams of fiber to keep you full and satisfied throughout the day.

Avocado, Kale and Quinoa Salad

1 cup Quinoa 
1 cup vegetable stock
1 cup water

Fresh Vegetables
1/2 avocado

1/4 cup lime juice
1/2 cup cherry tomatoes
1/2 cup scallions
1 cup kale
1/4 cup olive oil

Start by preparing the quinoa as the directions state on the box. I used vegetable stock for half the liquid content to add more flavor. Chop avocado, cherry tomatoes, and scallions into equal size pieces. Add the lime juice to the vegetables to prevent the avocado from browning. Chop the kale into 1/2 inch size pieces and add the olive oil to the kale. Massage the kale for 1-2 minutes. Mix everything together and add spices and oil as needed!
