Coconut Flour Donuts

Hi guys!

Sorry I haven’t been writing as much. I have been busy looking for a part time job and hanging with friends. I am going to try my best to test some more recipes and write more often in the weeks to come.

Coconut Flour Donuts

1/2 cup vegetable oil
2/3 cup sugar
1/2 teaspoon salt
2 tsp vanilla extract
6 eggs
2 tbsp milk
1/2 cup coconut flour
1 tsp baking powder

Preheat oven to 350 F. Grease donut or muffin pan. In a large bowl whisk the oil, sugar, salt vanilla extract and eggs. Once the ingredients are mixed add the milk and mix well. In a small mix the flour and baking powder. Add the dry ingredients to the wet ingredients.

Pour the mixture into the donut or muffin pan, 3/4ths the way full. Bake for 10-15 minutes in the donut pan, or until it is golden brown around the edges. 18-20 minutes in the muffin pan.

 

 

Moringa Cashew Dressing

Hi guys!

Today I made Moringa Cashew Dressing. It is a great alternative to processed salad dressing that you can purchase in store and you probably have many of the ingredients already in your pantry. This dressing is creamy and healthy! Not only does it have many health benefits like, anti -aging and immune boosting, but also it tastes great and brings color to your table.

This recipe is a similar to Nutrition Stripped‘s turmeric dressing recipe.

Moringa Cashew Dressing

1/2 cup cashew butter
1 1/2 teaspoon Me Moringa Powder
3 tablespoon olive oil

2 tablespoon apple cider vinegar
1/2 teaspoon minced ginger
1/2 teaspoon black pepper
1 garlic clove
Juice of 1 lemon
1 teaspoon lemon zest
1/2 teaspoon sea salt 
1 tablespoon honey
2 tablespoon water (you can add more or less depending on the consistency you want)

Add all ingredients to a blender and blend until smooth.

Easy Veggie Chips!

This recipe is very easy and you can use a variety of vegetables! I used beets, potatoes and sweet potatoes.

Veggie Chips

5 potatoes or vegetable of choice
2 tbsp olive oil (or oil of choice)
1 tbsp salt
Seasoning of choice

Slice vegetables thin and place in a bowl and add oil, salt and seasoning of choice. I used garlic powder and pepper. Place in air fryer and cook for 20 minutes or until they are hard like chips. Make sure to shake the basket every 5-10 minutes. Take them out of air fryer and toss with salt and seasoning.

Air Fried Fries!

Air frying is my new favorite way to cook! here is a low fat fry recipe to cure your craving on fry-day.

Air Fried Fries

5 Russet Potatoes
2 tbsp oil of choice
2 tsp of salt
2 tsp ME Moringa moringa and Province Herb Blend

Scrub potatoes and pat dry. Slice into strips and put in a bowl. Add the oil and salt and mix until the potatoes are evenly coated. Put in air frier for 40 minutes at 400 degrees. Shake occasionally to make sure they are evenly fried. Once the 40 minutes is up, sprinkle the moringa seasoning on the fries.  

Moringa Gummies

Hey guys!

This recipe is easy and nutritious! The moringa packs these little gummies with antioxidants and Vitamin C, while the fruit juice you use packs it with many different nutrients.

Moringa Gummies

1/4 cup gelatin powder
2 tbsp honey (optional)
1 cup fruit juice ( I used organic pineapple coconut juice)
1/2 tsp Me Moringa powder

In a small pot place fruit juice and honey. Heat it over low heat until it starts to simmer. Sprinkle the gelatin over the fruit mixture while whisking. Continue to do so until the mixture is smooth. Whisk the moringa powder in at the end.

As soon as the gelatin and moringa is mixed in, pour into molds and place in refrigerator or freezer until they harden.

Air Fried Onion Rings

Hi guys!

I bought an air fryer this week and I am so excited about it! It is easy to use and easy to clean! It cooks the items by circulating hot air around the food. It creates a crispy layer, similar to frying food. It is much healthier than frying, since you can use little to no oil.

Air Fried Onion Rings

2 Onions
1 cup all purpose flour
1 cup panko bread crumbs 
salt and pepper to taste
2 eggs
2 tbsp milk

Set air fryer to 400 F. Line baking sheet with parchment paper. 

Slice the onions into 1/2 inch rings and separate into rings.

 Make the egg wash by whisking the eggs and milk in a separate bowl. Put flour in one bowl with salt and pepper. Put the bread crumbs into a different bowl. 

Dip an onion ring into the egg wash. Make sure the onion ring is evenly coated. The transfer the onion ring into flour. Evenly coat the onion ring. Dip it back into the egg wash then into the bread crumbs. Place it on the prepared baking sheet. Repeat until all rings are evenly coated with flour and bread crumbs. Refrigerate for 30 minutes. 

Put in air fryer for 10 minutes or until golden brown.

Chocolate Chip Honey Cookies

1/2 cup coconut oil
1/2 cup honey
2 tsp vanilla
1 egg
1 cup all purpose flour
1 cup oats
1 tsp baking soda
1/2 tsp salt
2 cups chocolate chips

Preheat oven to 375 F. Line baking sheet with parchment paper. Whisk coconut oil, honey, vanilla and egg in a large bowl. In a separate bowl mix flour, oats, baking soda, and salt . Add the dry ingredients to the wet ingredients and mix with a spoon, then mix in the chocolate chips. 

Scoop 1 tablespoon of the dough into balls onto the prepared cookie sheet, leaving two inches between each cookie. Bake for 10 minutes until golden brown around the edges.

Eggplant “Bacon”

This recipe hit the spot on this snowy day! I worked from home today, so I decided to experiment with some recipes. The eggplant bacon is slightly sweet, crunchy and savory! Perfect for sandwiches! Check it out

Eggplant “Bacon”

1 medium eggplant
2 tbsp olive oil
2 tbsp soy sauce
1/2 tsp paprika powder
1/2 garlic powder
1 tsp honey 

Preheat the oven to 300 F and line two baking sheets with parchment paper. Cut the eggplant in half, then slice in thinly slice the eggplant. 
In a small bowl, whisk the olive oil, soy sauce, paprika powder, garlic and honey. Place the eggplant on the baking sheets and brush both sides with the sauce. 
Bake for about 40 minutes or until the eggplant starts to crisp.

Moringa Latte

Hi guys!

I apologize for being MIA, but I was extremely busy with school. I just finished my last class yesterday and I am thrilled! It is bittersweet though, I will miss going to class and learning, but I am grateful to be done with homework for good.

I started my day off with a Moringa Latte. Moringa gives you a boost of energy while providing Vitamin C and antioxidants. The latte has an earthy taste, like most products that contain moringa, but the natural boost of energy is worth it!

Moringa Latte

1 tsp Me Moringa powder
1 tbsp hot water
2 tsp monk fruit sugar (or any kind of sugar)
1 tsp vanilla extract
1 tsp vital collagen powder
1 cup skim milk

In a cup, mix the water and moringa powder until it forms a paste. In a sauce pan add the milk, sugar, vanilla and collagen. Bring the milk to a simmer and whisk until frothy. Add the milk mixture to the moringa paste! Enjoy!

Simple Oatmeal Muffins

Honestly, these are the best muffins I have ever made/had! Try them out!

Simple Oatmeal Muffins

1 cup all-purpose flour
1 cup steel cut oats
3 tbsp sugar
½ tsp salt
½ tsp chia seeds
1 tbsp baking powder

1 egg
1 cup milk
¼ cup melted butter
½ tsp vanilla

Preheat oven to 375 F. Grease the donut pan or muffin pan. Mix the flour, oats, baking powder, salt, chia seeds and sugar in a large bowl. Add the egg, milk, and butter and stir until the flour is moist. Spoon the mixture into the pan. They should be two-thirds of the way full. Bake for 20-25 minutes.
